Today we had an interesting lecture and demonstration with Chef Massimo Bottura of Osteria Francescana in Modena. He is widely considered to be the best chef in Italy, and certainly has a very modern take on food. The photograph above is his dish of Central Park at 59th Street. He was in the park with his child and he started noticing all the skyscrapers around him. So, naturally, he created a dish. This is his version of bollito misto, which are traditionally boiled meats but he sous vides them instead (he LOVES sous vide). The rosemary foam represent the trees. Almost makes me think of home…sort of.
